Who are the Taste Rebels?
Aiming at enhancing the global notion of wine culture, we provide a space for gaining knowledge and experiences of natural wine and sensory science through projects, publications, courses, and educational wine travels.
We want to challenge and expand taste as a notion. Is there such a thing as good taste or bad taste – or should we all just develop our own sense of taste and broaden our minds?

Charlotte Mithril
Charlotte Mithril (PhD) – Co-founder of Taste Rebels.
Food and wine-lover. She has been working scientifically and practical with sensory science since 2006 and has in her PhD developed the New Nordic Diet.
As associate Professor with focus on research and development projects, she has been working within the fields of sensory science, gastronomy, food experiences, consumer trends, food culture and sustainability and additionally has been working as sensory scientist and product developer at Pernod Ricard.
She is a food- and wine writer, co-author of a cookbook and several scientific publications, she has made food programs for Danish TV and online seminar for Coursera.
Last (but definitely not least!) she is co-owner of a vineyard in Southwest France making natural wine.
Jon Capoul-Høyrup
Jon Capoul-Høyrup – Co-founder of Taste Rebels.
As the only son of a French pioneering organic winemaker, Claude Capoul Jon is a naturally born wine lover.
Spending his childhood and adolescent years in the vineyard he knows his way around every aspect of winemaking.
Holding a Masters’s degree in Ethnography Jon has a keen interest in consumers’ behaviors. As such he has conducted numerous development projects in the food and beverage sector and has co-authored a number of articles studying food habits, particularly in the public sector.
Also, he is a natural winemaker both at the family estate and a co-owned vineyard, both in Southwestern France.
