Dosage is a technique used in the traditional method (méthode traditionnelle) of sparkling wine production.
After the fermentations, riddling and removing of the lees (disgorgement), the wine is topped up with a mixture of wine and often also sugar. This mixture is known as liqueur d’expédition and the process is called dosage. It is in this process that the final sweetness of the wine is determined.
After dosage, the bottle is resealed with a cork and a wire cage.
