Carbonique maceration

Carbonique maceration is a winemaking technique in which whole bunches of grapes are fermented in a carbon dioxide rich environment (sealed tanks).

Fermentation happens inside the grapes after which they burst because of the pressure. The fermentation continues in the juice, which is kept in the tank or bled off into another vessel.

The process light and fruity wines with low levels of tannins and is often used in natural winemaking.
