Oxidation

Oxidation is the chemical reaction that occur when something like e.g. wine comes into contact with air (oxygen).

It can result in both a wine going faulty, or it can be a deliberate process giving the wine more complex flavours and less astringency (controlled oxidation).

Over exposure to oxygen turns the wine into vinegar.
